Nothing beats eating a perfectly ripe peach except eating a perfectly ripe peach stuffed with even more perfectly ripe fruit and a citrus strawberry sauce. Peach fruit cups make a great snack or fully raw meal. The great thing is you can try this recipe with so many different fruits, nectarines, apricots, plums or just about any firm fruit your heart desires.
All you need is:
4 ripe but slightly firm peaches sliced in half with the seed removed (chop one peach half for filling)
1/3 cup of blueberries
1/3 cup of raspberries
1/3 cup of blackberries
1/2 cup of strawberries
1/4 cup of liquid of your choice
A squeeze of fresh lemon, lime or orange juice
First make the strawberry sauce by adding the strawberries, lemon, lime or orange juice and 1/4 cup of liquid to your blender and blend until smooth.
Next pour equal amounts of the mixture into each peach half.
Then fill the peaches with raspberries, blackberries and diced peaches.
Chill before serving if you desire.
